Ingredients for 4 servings:

  • 250 g butter
  • ½ cup cocoa powder
  • 2 cups sugar
  • 4 eggs
  • 1 pinch(s) vanilla pod(s), ground
  • 1 ½ cups flour
  • 100 g pine nuts, ground or almonds
  • 150 g chocolate coating

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 35 minutes

quick to make yet sophisticated

By cups, I mean regular coffee service cups. Melt the butter and stir in the cocoa powder. Beat the eggs and sugar until fluffy, then stir in the butter-cocoa powder mixture and the vanilla bean. Finally, stir in the flour and pine nuts. Spread the mixture on a greased, rimmed baking sheet and bake in a convection oven at 160°C for about 20 minutes. Once cooled, cover with chocolate coating. Then cut into approximately 2 x 2 cm cubes while the chocolate is still not completely solid. I store the cubes in a tin, separated by layers of baking paper. These cookies are really quick to make and, unfortunately, they disappear quickly.
