Grandma Theresa's Kowelenzer Dübbekuchen

Ingredients for 6 servings:

  • 1 ½ kg potato(s), waxy
  • 6 Mettenden
  • 6 slices of bacon
  • 3 eggs
  • 2 onions
  • nutmeg
  • pepper
  • Salt
  • 6 rolls, stale, hard
  • Milk
  • Butter or fat for the casserole dish
  • Mustard as a side dish
  • Applesauce as a side dish

Working time approx. 1 hour; Cooking/baking time approx. 2 hours; Total time approx. 3 hours

according to grandma’s recipe

Soften the hard rolls in milk. This takes some time. Wash, peel, and grate the potatoes. Crack the eggs into the grated potato mixture (1 egg for every 500g). Dice the onions, bacon, and Mettenden sausages and add them as well. Squeeze out the softened rolls and add them to the mixture. Season with salt, pepper, and nutmeg and mix well. Grease a roasting pan with fat or butter. Spread the mixture evenly in the roasting pan, making sure no residue sticks to the edges, as they will burn immediately. Place the roasting pan in an oven preheated to 250°C (fan oven) and bake for 1.5-2 hours. If the Dübbekuchen is getting too brown too quickly, reduce the temperature to 200°C (400°F) and cover with aluminum foil. Check the browning every 15-20 minutes. We serve it with mustard and applesauce.
