Grandma's apple pancakes

Ingredients for 2 servings:

  • 2 eggs, separated
  • 1 pinch of salt
  • 1 pinch(s) of sugar
  • 125 g flour
  • ½ tsp baking powder
  • 125 ml milk
  • 125 ml mineral water
  • 1 apple
  • 2 tsp cinnamon sugar
  • oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Peel and core the apple, and cut it into small pieces or thin slices. Combine the egg yolks with salt, sugar, flour, baking powder, milk, and mineral water using a hand blender (careful, it will splash a bit). Beat the egg whites until stiff peaks form and fold in. Finally, carefully fold in the apple pieces. Heat the oil in a pan and cook the pancakes in batches until they are nicely browned on both sides. Sprinkle with cinnamon sugar and serve immediately. My grandmother always served these pancakes with lentil soup or vegetable stew.
