Grandma's Béchamel sauce

Ingredients for 4 servings:

  • 40 g butter or margarine
  • 40 g ham, finely diced
  • 40 g wheat flour
  • 60 g onion(s), finely chopped
  • 250 ml broth or water
  • 250 ml milk or cream
  • some salt
  • some white pepper, freshly ground

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Melt the fat and add the ham cubes. Heat the onions and flour until light yellow. To avoid lumps, gradually add the broth (water) and milk (cream), whisking as you go. Bring to a boil and simmer for about 10 minutes. Strain the sauce through a sieve, if desired, and then season with salt and pepper.
