Grandma's Beer – Roulades

Ingredients for 6 servings:

  • 6 beef roulades
  • 3 slice(s) ham, cooked
  • 100 g bacon
  • 3 gherkins
  • 2 onions
  • Mustard
  • 30 g lard
  • ¼ liter broth
  • ½ liter malt beer
  • cornstarch
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Brush the roulades with mustard, salt, and pepper. Halve the cooked ham and arrange them among the roulades. Dice the bacon, onions, and gherkins and arrange them among the roulades. Carefully roll up the meat and tie or tuck it together. Brown it all over in hot lard. Deglaze with stock and pour in the malt beer. Cover and simmer for about 1 1/2 hours. Thicken the meat juices with cornstarch and season with salt and pepper. Serve with boiled potatoes, dumplings, red cabbage, Brussels sprouts, and a light red wine.
