Ingredients for 4 servings:
- 1 kg potatoes
- 1 kg carrot(s)
- ½ celeriac
- 2 leek(s)
- 1 onion(s)
- 2 garlic cloves
- 1 tbsp vegetable broth, granulated, vegan
- 1 bunch of parsley
- salt and pepper
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes
Peel and dice the potatoes, carrots, and celery. Trim, wash, and slice the leek into rings. Peel and finely dice the onion and garlic. Wash and pick the parsley. Place the prepared ingredients in a pot, add 1 1/2 liters of water, and bring slowly to a boil. Simmer the soup for about 20 minutes. Purée the soup with a hand blender, stirring until frothy. Bring everything back to a boil and season with salt, pepper, and, if desired, the granulated broth.
