Potato and onion soup with herbs

Ingredients for 2 servings:

  • 500 ml soy milk (soy drink)
  • 400 g potatoes, mainly waxy
  • 100 g onion(s), diced
  • 1 tbsp vegetable stock powder
  • 1 tbsp parsley, dried
  • 1 tbsp chives, dried
  • 1 tbsp rapeseed oil
  • some salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

vegan

Peel, wash, and finely dice the potatoes. Heat the oil in a large pot and sauté the diced potatoes and onion for about 5 minutes. Then deglaze with the milk and stir in the stock powder. Simmer for about 15 minutes, stirring frequently to prevent the milk from burning. Add the dried herbs and season with salt and pepper. Serve.
