Grandma's gingerbread

Ingredients for 80 servings:

  • 220 g sugar
  • 250 g honey
  • 750 g flour
  • 75 g margarine or butter
  • ⅛ liter of water
  • 1 tsp ammonium bicarbonate
  • 1 egg(s)
  • 1 tbsp cinnamon
  • 1 pinch of clove(s), ground
  • ½ tsp baking powder
  • Powdered sugar, for glazing

Instructions

Working time approx. 40 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 40 minutes

Boil the water and sugar, then melt the honey into the sugar solution. Pour the lukewarm mixture into a large bowl and dissolve the horn salt in it. Mix the flour, margarine, egg, cinnamon, ground cloves, and baking powder into a dough and let it stand in a cool place overnight. Divide the dough into portions, knead thoroughly, and roll out to about 4 mm thick. Cut out shapes as desired and bake at 180°C for 8 minutes. This also works great for making a witch’s house. Mix the icing from powdered sugar and lemon juice and brush it over the cooled gingerbread.
