Ingredients for 4 servings:
- 8 large potatoes
- 500 g flour
- 250 g cheese (brynza or cottage cheese)
- 200 g bacon
- some salt
- possibly cream or crème fraîche

Slovak national dish – potato spaetzle with bryndza
Peel the potatoes and finely grate them. Add the flour; the dough should still be sticky; season with salt to taste. Bring a large pot of water to a boil. Press the dough through a spaetzle sieve. When the halušky float to the top, they’re ready. Dice the bacon and fry it in oil in a hot pan. If you don’t like the bacon cubes, simply fry the whole bacon and remove it at the end. It’s all about the taste! Add the halušky and finally add the cottage cheese to the pan. Season with salt. Tip: It tastes even better with a little cream or crème fraîche! Some people also sprinkle grated cheese on top. Bryndza: This sheep’s milk cheese is unfortunately only available in Slovakia or southeastern Europe. But it can be wonderfully substituted for cottage cheese.
