Grandma's pancakes with bacon

Ingredients for 4 servings:

  • 4 slice(s) bacon, fattier
  • 6 eggs
  • 1 tbsp flour
  • 200 ml milk
  • 1 pinch of salt

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Halve the bacon slices and fry them in a non-stick pan over low heat. Be careful not to overcook the bacon, as this will cause it to become floury and lose its flavor. Remove all but a tablespoon of the bacon and rendered fat. Combine the eggs, flour, milk, and salt in a mixer. Pour the mixture into the pan with the remaining fat and fry over medium heat. Prick the pancake in various places with a fork to allow the liquid to drain to the bottom. The pancake is done when there is very little liquid left on the surface. Distribute the bacon pieces over the pancake. Carefully slide the pancake onto a plate and let it rest for about 20 minutes to allow any remaining liquid to completely solidify.
