Strawberry-Peach Tiramisu

Ingredients for 4 servings:

  • 250 g mascarpone
  • 250 g quark
  • 100 ml cream
  • Sugar, to taste
  • Ladyfingers
  • Peach liqueur
  • 1 can/n peach(s) or fresh peaches
  • 250 g strawberries

Instructions

Working time approx. 20 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 20 minutes

Drain the peaches and slice them. Hull the strawberries and slice them as well. Mix the peach juice with peach liqueur (if desired) and a splash of cognac. Whisk the marcarpone with the quark and sugar, fold in the whipped cream, place the sponge fingers in a baking dish (preferably single-serve molds), and drizzle with peach juice/liqueur. Spread the mascarpone cream over the top, arrange the peaches and strawberries on top, then cover with mascarpone, then another layer of sponge fingers (don’t forget to drizzle), mascarpone, fruit, and another layer of mascarpone on top. Garnish with strawberries, peach slices, and perhaps a sprig of mint. Let it sit in the refrigerator for a few hours, then remove from the refrigerator about an hour before serving.
