Bohemian specialty
Make the potato dough: Peel the boiled potatoes, mash them, and let them cool. Mix in the flour, 1 egg, and the yolk of one separated egg, along with a pinch of salt. Knead the mixture into a dough. Roll out the potato dough on a floured surface and cut out circles about 10 cm in diameter. Place a teaspoon of Powidl (a kind of sweet potato) in the center of each circle, brush the ends of the dumplings with egg white, and fold them together. Place the dumplings in a pot of boiling salted water for about 5 minutes. Remove with a slotted spoon and let them drain. Heat the butter in a pan and toss the dumplings in it. Can be served as a dessert or as a sweet main course.
