Grandma's pumpkin bread

Ingredients for 1 servings:

  • 1 cube of yeast
  • 1 tsp sugar for the yeast starter
  • 1 cup of milk, approx. 100 ml
  • 1 kg wheat flour, type 550
  • 500 g pumpkin(s), raw grated
  • 3 tbsp sugar for the dough
  • 50 g butter or margarine, melted; 50 – 80 g
  • 1 egg(s) or 2
  • 1 tsp, levelled lemon zest, alternatively 1 – 2 drops lemon flavor
  • 1 tsp sautéed coriander
  • 1 tsp salt

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 50 minutes; Total time approx. 2 hours 20 minutes

Dissolve the yeast in the milk, mix with 1 teaspoon of sugar and 3 tablespoons of the flour, and let it rise for about 20 minutes. Combine the flour, pumpkin, and the other ingredients in a bowl or food processor, add the yeast, and knead everything into a smooth dough. Let it rise for another 20 minutes. Knead the dough thoroughly again and place it into two small or one large loaf pan. Score the dough crosswise and let it rise again. Meanwhile, preheat the oven to 180 degrees Celsius. Place the bread in the oven and bake at 180 degrees Celsius for about 40-50 minutes. This is a very moist bread that tastes fresh and delicious even the next day. It tastes great with apple or quince jelly. Delicious!
