Ingredients for 6 servings:

  • 10 stale rolls or 450 g white bread
  • 3.8 liters of milk
  • 3 eggs
  • 150 g sugar
  • 1 packet of vanilla sugar
  • ¼ kg apples
  • 5 tbsp raisins
  • 2 tbsp hazelnuts, ground
  • 60 g butter, melted, browned
  • 2 egg whites, beaten to stiff peaks
  • n. B. Cinnamon powder
  • Fat for the mold

Instructions

Working time approx. 35 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 2 hours

Delicious leftovers

Cut the rolls into thin slices and place in a bowl. Whisk together the milk, 4 tablespoons of sugar, and the eggs. Pour everything over the rolls and stir. Let the mixture rest for 30 minutes. In the meantime, thinly slice the apples. Grease a baking dish well, then place a layer of soaked rolls on top, followed by a layer of the finely sliced ​​apples. Then scatter some raisins, a pinch of cinnamon, and sugar over the top. Continue in this way until all the ingredients are used up. Finish with a layer of bread. Press the mixture down firmly and drizzle with a little melted, browned butter. Bake in the oven at 200°C for about 40-50 minutes. Then mix the beaten egg whites with the vanilla sugar and spread over the browned mixture. Sprinkle with the nuts and the remaining sugar and return to the oven for another 5-10 minutes until a crust has formed.
