Tomato salad with tuna sauce

Ingredients for 4 servings:

  • 1 can tuna, in its own juice (150 g)
  • 50 g capers
  • 3 tbsp mayonnaise (light salad mayonnaise)
  • 150 g yogurt (full milk)
  • Salt
  • Cayenne pepper
  • 3 tbsp vinegar (e.g. sherry vinegar)
  • 4 large tomatoes (approx. 125 g each)
  • 1 medium-sized cucumber(s) (500 g)
  • 1 small vegetable onion(s) (approx. 300 g)
  • 2 stalks of parsley
  • 16 slice(s) turkey breast – cold cuts (approx. 30 g each), smoked

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Drain the tuna and capers separately. Set aside a few capers for garnish. Using a hand mixer, purée the remaining capers, tuna, salad mayonnaise, and yogurt until smooth, then season with salt, cayenne pepper, and vinegar. Chill the tuna sauce. Wash and trim the tomatoes and cucumber, then chop into large pieces. Peel the onion and cut into medium-sized cubes. Wash the parsley, pat dry, pick off the leaves, and tear into small pieces. Mix the tomatoes, cucumber, onion, and tuna sauce together, season to taste, and arrange on a platter with the turkey. Garnish with the remaining capers and parsley.
