Grandma's spinach

Ingredients for 4 servings:

  • 1 kg spinach, fresh, ready to cook
  • 60 g bacon, fat, smoked, cut into cubes
  • 1 tbsp rapeseed oil
  • 1 small onion(s), diced
  • some salt
  • possibly cornstarch
  • 1 tbsp water, cold, for mixing
  • some condensed milk, optional

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Wash and sort the spinach, draining wet, and let it wilt in a large pot over medium heat without adding any water, stirring occasionally. Then roughly chop and mince. Heat the oil in the pot, fry the bacon bits, and then remove them. Sauté the onion until light yellow. Add the spinach, heat briefly, season with salt, and cook over low heat, covered, for about 10 minutes. If it’s too thin, thicken with the cornstarch and season with canned milk. Serve with boiled potatoes and fried eggs.
