Grandpa's apple compote with pieces

Ingredients for 4 servings:

  • 500 g sweet apples (e.g. Pink Lady)
  • 500 g sour apples (e.g. Boskop)
  • 2 tbsp cane sugar
  • 250 ml water
  • 1 dashes syrup, elderflower
  • 1 tbsp lemon juice
  • 1 tsp cinnamon powder

Instructions

Working time approx. 30 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 2 hours

Peel, quarter, and core the apples, cut into 2cm pieces, and place them in a large saucepan. Add the cane sugar, lemon juice, cinnamon, elderberry syrup, and water to the pan and bring to a boil. Once boiling, reduce the heat to medium. Stir briefly after four minutes. Repeat after another four minutes. After a total of 12 minutes, you will have an apple compote with crunchy pieces. At the same time, you can sterilize four 500ml jars, lids, and rubber bands individually in the steamer at 100°C for 15 minutes. Then fill the four jars, fit the lids with rubber bands and preserving clips, and place them in the steamer at 90°C for 45 minutes. Then turn the appliance off and leave it in the appliance for another 45 minutes. Then remove it from the appliance and cover with tea towels and allow it to cool slowly.
