Ingredients for 12 servings:

  • 1 kg fig(s), green
  • 1 kg sugar
  • 1 tsp, distilled baking soda (sodium bicarbonate)
  • Water as needed

Instructions

Working time approx. 1 hour; Rest period approx. 3 days; Total time approx. 3 days 1 hour

Fig Compote

Fill a pot with water and bring to a boil. Add the baking soda and figs (the figs should just be covered with water) and simmer for about 10 minutes. Cover the pot and let stand until the next day. Use a small knife to scrape off the fig skin, which comes off easily. Pierce each fig with a knitting needle and place it in fresh water. Leave it in the water for 2 days, watering it 2-3 times a day. Boil half a liter of water and add the sugar. Stir until it dissolves. Now add the figs and simmer for another 30 minutes. Let stand again until the next day. Boil again the next day, but this time until the figs become translucent and the sugar water thickens. Tastes delicious with whipped cream! This recipe is a bit laborious, but it’s definitely worth it.
