Grandpa's tomato sauce

Ingredients for 4 servings:

  • 125 g bacon, diced or diced ham
  • 1 large onion(s), diced
  • 4 tbsp olive oil
  • 1 can of tomatoes, peeled (800g-can), chopped
  • 2 tbsp tomato paste
  • 1 cube of soup, instant
  • some lemon juice
  • Oregano, fresh in summer, dried in winter
  • Paprika powder
  • Paprika powder (rose paprika), a little for seasoning
  • Salt, to taste

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Sauté the bacon and onions in olive oil. Add the tomatoes, rinse the can with a little water, and add it as well. Dilute the tomato paste with a little water and pour it in. Simmer for at least half an hour. Add the stock cube (I now use homemade stock) and the spices, don’t skimp on the paprika and oregano. If desired, my dad thickened the sauce with a little flour and water. My dad’s cooking repertoire was quite limited, but when he had time, he spent so much time in the kitchen that I will never forget it. The above dish, which usually came with spaghetti, is super simple, but as a child and teenager, I learned a lot from him in the kitchen, especially when it came to intelligent and efficient workflows. Without – from today’s perspective – having great skill, he was able to convey his love and dedication, as well as his calm concentration while cooking, simply by example. Thanks, Dad!
