Ingredients for 1 servings:
- 500 g oat flakes, fine
- 400 g almonds, hazelnuts, pecans, walnuts, as desired
- 100 g brown sugar
- 1 tbsp cinnamon, ginger, nutmeg, clove powder, other spices as desired
- 100 g butter
- 4 tbsp maple syrup, or honey
- Lemon peel or orange peel
- 500 g dried fruit, as desired
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes
Preheat the oven to 160°C. Line a baking sheet with parchment paper. Roughly chop the nuts and place them in a bowl with the oats. Then add the desired spices, the zest of an orange or lemon, and mix in the sugar. In the meantime, melt the butter with the maple syrup or honey, then pour it over the oat mixture and mix everything thoroughly until every oatmeal has been coated. Place the oats on the baking sheet, flatten them evenly, and bake on the second-to-lowest rack in the fan oven for 20 minutes. During this time, roughly chop the dried fruit. Tart fruits like cranberries, apricots, or blueberries are good. Apples are also delicious. After 20 minutes, remove the baking sheet and turn the oats over as best you can with a spatula. Some will have clumped together, but that’s okay. The surface is now nicely browned; turning it over ensures that the oat flakes on the bottom become nice and crispy. Then bake for another 20 minutes. Let the tray cool briefly, then add the dried fruit, and seal everything in an airtight container. It will keep like a normal muesli mix (although mine only lasts for about two weeks before it’s all gone!). It’s also great for giving as a gift. Simply package it in pretty jars, write the ingredients on the lid, decorate it nicely, and make someone happy. Tip: If you like coconut flakes in your muesli, you should toast them separately, as they don’t take as long to cook. Place the coconut flakes individually on a baking tray and toast them on the lowest rack for around 10-15 minutes. Always keep an eye on them. It depends on the thickness of the flakes!
