Gratinated asparagus

Ingredients for 4 servings:

  • 1 kg asparagus, white
  • Salt
  • 1 tsp sugar
  • 1 tsp butter
  • 250 g sour cream
  • 2 tbsp white wine
  • 1 egg yolk
  • pepper
  • 250 g goat cheese
  • ½ bunch chives, cut into rolls

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

with goat cheese

Trim the asparagus and cook in boiling salted water with sugar and butter until al dente. Preheat oven to 225°C. Combine the sour cream with the wine and egg yolk and season with salt and pepper. Dice the goat cheese and stir half into the cream. Drain the asparagus and place it in an ovenproof dish. Pour the cream over it and sprinkle with the remaining cheese. Bake in the oven for about 15 minutes, until the cheese has melted. Garnish with chives.
