Ingredients for 4 servings:

  • 1 kg potatoes (grated)
  • 500 g spinach, frozen
  • 4 large mushrooms
  • 16 slice(s) processed cheese, (Chester)
  • 1 small onion(s)
  • 2 cloves garlic
  • 2 eggs
  • e.g. salt and pepper
  • some butter
  • 1 large onion(s)
  • e.g. oat flakes
  • nutmeg

Working time approx. 30 minutes; Total time approx. 30 minutes

Potato pancakes with spinach and fresh mushrooms

Sauté a small onion and chopped garlic in butter until translucent. Add the thawed (frozen) spinach, season with salt, pepper, and nutmeg, and sauté over low heat (adding a little water if necessary). Grate the potato and add the large onion, eggs, and seasoning. Thicken with the oatmeal. Fry the potato pancakes in batches in the pan and place on a baking sheet. Top with the spinach, fresh mushrooms, and cheese. Bake in the oven at 180°C (350°F) until the cheese melts. Alternatively, you can drizzle the spinach with cream and then thicken with processed cheese. In this case, I would recommend using a mild cheese for the topping.
