Ingredients for 4 servings:
- 1 kg tomatoes
- 1 red bell pepper(s)
- 1 onion(s)
- 2 garlic cloves
- 1 tsp oil
- Pepper, white
- Salt
- oregano
- basil
- 2 tbsp parsley
- 1 bag of mozzarella
- 1 ciabatta, for baking, 300 g each

quick, tasty and WW – suitable with about 4.75 points
Wash the tomatoes and peppers, halve them, and remove the stems and, in the case of the peppers, the white parts. Roughly chop the vegetables. Peel and finely dice the onion and garlic. Heat the oil in a pan and sauté the diced onion and garlic. Then add the tomatoes and peppers, bring to a boil, and season generously with pepper, salt, basil, and oregano. Cover and simmer briefly. Preheat the oven to 225 degrees Celsius (425 degrees Fahrenheit) and place the vegetables in a baking dish. Drain the mozzarella, cut it into small cubes, and spread it over the vegetables. Sprinkle with pepper. Place the baking dish on the middle shelf of the oven, place the ciabatta bread next to it, and bake for 10-12 minutes. Serve the bread with the vegetables. For WW users: The vegetables with the mozzarella are worth 1.75 points per person. Unfortunately, I don’t know how many points a ciabatta bread is worth. But if you go by the points for flatbread, a quarter of 75g has about 3 points, so the dish has a total of 4.75 points per person.
