Gratinated tomatoes with mozzarella and parsley crumbs

Ingredients for 2 servings:

  • 4 large tomatoes
  • 2 onions
  • 3 slice(s) rusk (wholemeal rusk)
  • 60 g butter
  • 1 bunch of flat-leaf parsley
  • 2 mozzarella
  • Salt and pepper, black from the mill

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

A tender promise that makes you want more

Finely chop the parsley. Dice the onions. Slice the mozzarella and tomatoes, and crumble the rusks. Arrange the tomato slices and mozzarella slices alternately on a heatproof plate. Season generously with salt and pepper. Fry the diced onions in the butter until translucent. Add the rusk crumbs and chopped parsley and mix everything together. Season to taste with salt and pepper. Spread this mixture over the tomato and mozzarella slices. Place the plate in a preheated oven at 200°C fan/convection oven with the grill activated (level 2) and gratinate the tomatoes and mozzarella for 10-15 minutes. Serve with toasted brown bread.
