'Gratined' fruit salad

Ingredients for 2 servings:

  • 3 bananas
  • 1 orange(s)
  • 1 apple, sour
  • 200 g grapes, white, seedless
  • ½ honeydew melon(s)
  • ½ mango(s)
  • possibly kiwi(s) if required
  • 3 tbsp lime juice
  • 3 tbsp brown sugar
  • 7 basil leaves
  • 200 g whipped cream
  • 100 g powdered sugar
  • 250 g cream cheese (low-fat cheese if required)
  • 3 tbsp Amaretto
  • 50 g biscuits (cantuccini)
  • 3 tbsp brittle

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash the fruit, peel if necessary, and cut into bite-sized pieces. Then mix with the lime juice and brown sugar. Tear the basil and mix it in too (it sounds strange, but it tastes delicious – just give it a try). Whip the cream with the powdered sugar until stiff. Then mix with the quark and Amaretto (you can also do this without alcohol, of course). Transfer the fruit salad to a baking dish and spread the quark mixture on top. Chill for a while. To serve, crumble the biscuits (works great with an ice crusher) and sprinkle them on top of the quark along with the brittle.
