Graved Salmon

Ingredients for 4 servings:

  • 1 kg salmon fillet(s)
  • 60 g salt
  • 40 g sugar
  • 65 g dill
  • ½ tsp pepper
  • 1 lemon(s)
  • 3 tbsp vinegar (wine vinegar)
  • 2 tbsp sugar
  • 4 tbsp mustard
  • ⅛ liter of oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Mix the salt and sugar. Squeeze the lemon. Rub the fish with lemon juice, salt, and 40g of sugar. Chop the dill. Place 15g of dill in a clay dish and place the salmon on top. Mix 35g of dill with pepper and sprinkle on top. Cover and let stand for 2 days. Turn the salmon over after one day. Mix the vinegar, 2 tablespoons of sugar, and mustard. Gradually add the oil while stirring, then stir in the remaining dill. Chill the sauce. Cut the salmon into thin slices and serve with the sauce. Serve with toast and butter.
