Ingredients for 4 servings:

  • 40 g sugar
  • 4 egg yolks
  • 1 vanilla pod(s), pulp
  • 375 ml cream
  • 125 ml milk
  • 70 g sugar, brown, fine

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

In a bowl, whisk together the sugar, egg yolks, and vanilla seeds. Bring the cream and milk to a boil and then stir into the egg yolk mixture using a wooden spoon. Pour the mixture into 4 small, ovenproof dishes. Place in a preheated oven at 90°C and let it set for about 60 minutes. Remove the dishes and let it cool. Before serving, sprinkle with fine brown sugar and caramelize using a blowtorch until golden yellow. Tips: Fresh fruit, such as a few berries of your choice, goes really well with this. To ensure it turns out well, it is important to use the right dishes. They should be no higher than 2.5 cm so that the mixture sets.
