Ingredients for 4 servings:

  • 1 kg potatoes, cooked, from the previous day
  • 1 kg flour
  • 1 egg(s)
  • Salt
  • 150 g sour cream
  • 1 pack of cracklings
  • Milk

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Grate the potatoes (I always press them through my spaetzle press), combine with flour, egg, and salt to form a firm dough. Roll out the dough to a thickness of 4 mm, spread with sour cream, and arrange the cracklings on top. Cut into strips about 4 cm wide and 12 cm long, roll them up, and place them in a greased dish. Pour in enough milk to cover the bottom. Bake at 200°C for about 40-50 minutes, until the cracklings have a nice crispy crust.
