Ingredients for 4 servings:

  • 1 kg potatoes, medium-sized
  • 1 lemon(s), juice
  • 50 ml olive oil
  • 1 tsp oregano, dried
  • Salt and pepper, black, freshly ground
  • 4 chicken legs

Peel the potatoes and cut into wedges. Make a marinade with lemon juice, olive oil, salt, freshly ground pepper, and oregano. Toss the chicken thighs in the marinade and set aside. Arrange the potatoes in a baking dish, pour over the marinade, and mix well. Place the chicken thighs on top of the potatoes and bake in a preheated oven at 200°C (top/bottom heat) for about 1 hour. Serve with a delicious Greek salad.
