- 500 g flour
- 1 tsp salt
- 30 g yeast, fresh
- ½ tsp sugar
- 300 ml water, warm
- 3 tbsp olive oil
- 250 g sesame seeds

Sift the flour into a bowl. Sprinkle salt over the flour and pour in the oil. Add the sugar to the warm water and dissolve the yeast in it. Add the yeast water to the flour, mix the dough, and knead well by hand. Return the dough to a bowl, cover, and let it rise in a warm place for 30 minutes. Preheat the oven to 225°C (425°F). Line a baking sheet with parchment paper. Knead the risen dough again, adding a little more flour if necessary, then shape it into a log and cut into 8 pieces. Shape each piece into a rope about 30 cm long and form it into a circle. Press the ends together firmly. Place warm water in a bowl and sprinkle the sesame seeds on a shallow plate. Dip the rings briefly in the water and then in the sesame seeds on both sides. Place the sesame rings on the baking sheet, cover, and let it rise for about 5 minutes, then place in the oven. After about 5 minutes of baking, spray a little cold water onto the oven floor. Close the oven door immediately and bake the doughnuts for 20-25 minutes, until they’re nicely browned.
