Ingredients for 4 servings:

  • 300 g tomatoes
  • ½ bunch parsley, flat
  • 200 g feta cheese
  • 2 bags of ready-made salad dressing mix
  • 100 g olives, pitted
  • 3 tbsp oil
  • 3 tbsp water
  • 1 small onion(s), red

Wash the tomatoes, remove the stems, quarter them, and deseed them. Dice the flesh. Wash the parsley and shake dry. Pick off the leaves and finely chop. Set aside 1 tablespoon for garnish. Place the feta cheese in a sieve and let it drain, then cut into small cubes. Dice the onion. Place the tomatoes, parsley, olives, onion, and feta cheese in a bowl. Combine the salad mix in a cup with 3 tablespoons of oil and 3 tablespoons of water and mix well. Pour the salad dressing over the ingredients and fold in loosely. Garnish the salad with the remaining parsley. This salad is addictive, quick to prepare, and a hit at every barbecue. We always serve it with grilled white bread.
