Greek fava made from chickpeas

Ingredients for 4 servings:

  • 250 g chickpeas, dried
  • 1 m.-large onion(s), red, sliced
  • 150 ml olive oil, good
  • some parsley, chopped
  • ½ m.-sized onion(s)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes

(aka broad beans), lukewarm starter with good olive oil and (usually) red onions

Soak the chickpeas in cold water overnight. Add cold water, add half an onion, bring to a boil, and season with salt. Reduce the heat and simmer gently for about 90 minutes. Drain and puree the peas (not the half onion!) with about half the oil, adding salt and pepper if desired. Transfer the dish to a deep dish and pour over the remaining oil. Serve sprinkled with a few onion rings and parsley.
