Ingredients for 2 servings:
- 4 eggs
- 100 g feta cheese
- 3 tomatoes
- 2 tbsp chives, cut into rolls
- 1 tbsp oil
- pepper, black
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Slice the tomatoes. Beat the eggs. Mash the cheese with a fork and mix it with the beaten eggs. Heat the oil and cook two omelets from the egg mixture. Top the omelets with the tomatoes, season lightly with pepper, and sprinkle with chives. Salt isn’t absolutely necessary, as the cheese is usually salty enough.
