Greek garlic potatoes

Ingredients for 4 servings:

  • 600 g potatoes, large, peeled and quartered
  • 50 ml olive oil, cold squeezed
  • 100 ml lemon juice, freshly squeezed
  • 3 cloves garlic, peeled, sterilized and finely chopped
  • 2 tsp oregano, dried
  • some salt
  • some black pepper, ground
  • 100 ml water, optional for the tray (not for the marinade)
  • some lemon juice to drizzle over the finished dish

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Potatoes are short

Preheat the oven to 230°C. Spread the potatoes on a deep baking sheet. Add the remaining ingredients (except the water) and mix well to coat all the potatoes. Bake on the top rack of a hot oven for about an hour, until golden brown and crispy on the outside. Turn occasionally and add more water if necessary. Serve as a side dish or as a snack, drizzled with lemon juice.
