Ingredients for 4 servings:
- 1 kg potatoes, peeled
- 60 ml olive oil
- 150 ml lemon juice, freshly squeezed
- 2 tsp oregano, dried
- 3 cloves garlic, very finely chopped (or more!)
- Salt and pepper, freshly ground black
- 100 ml water
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
Preheat the oven to 220°C (top/bottom heat). Quarter or eighth the potatoes and place them in a large, shallow, ovenproof dish. Add the remaining ingredients and spread them evenly to coat the potatoes. Drizzle the potatoes first with the lemon juice and then immediately with the olive oil. Bake uncovered on the top rack of the hot oven for about 1 hour, until lightly browned, crispy on the outside, and soft on the inside. Stir the potatoes occasionally during cooking and add water if necessary.
