Greek meatloaf

Ingredients for 4 servings:

  • 250 g carrot(s)
  • 2 dashes lemon juice
  • 150 g sheep cheese, Greek (feta)
  • 600 g minced meat, mixed
  • 2 eggs
  • 60 g walnuts, chopped
  • salt and pepper
  • 3 garlic cloves
  • 2 bunches of parsley
  • Fat for frying
  • 2 tbsp breadcrumbs

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the carrots and grate them medium-finely, drizzle with lemon juice. Crumble the feta cheese between your fingers, then mix with the carrots and the minced meat. Add the eggs, breadcrumbs, and walnuts. Peel and press the garlic into the mixture. Rinse the parsley, remove the stalks, chop medium-finely, and stir in. Mix everything well and season generously with salt and pepper. Preheat the oven to 200°C (400°F). Shape the mixture into a small loaf, place it in a greased roasting pan, and roast for 60 minutes. Slice the meatloaf and serve with mashed potatoes and salad.
