Ingredients for 4 servings:

  • 600 g mushrooms, small
  • 125 ml white wine
  • 1 bay leaf
  • 10 coriander seeds
  • 1 large tomato(s)
  • 1 cup parsley, chopped
  • 1 large onion(s) (diced)
  • 1 cup olive oil
  • 1 lemon(s), the juice
  • Sea salt
  • some thyme
  • Pepper from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

In a bowl, season the cleaned mushrooms with sea salt, pepper, and lemon juice. Peel, deseed, and finely dice the tomato, then add it to the mushrooms along with the white wine and the remaining seasonings. Heat the oil in a saucepan, sauté the diced onion, add the mushrooms (along with the other ingredients), and simmer over medium heat with the lid on for about 5 minutes. The mushrooms can be served cold or warm and are also easy to prepare a day in advance. I serve them with baguette as a starter or as a side dish to grilled food.
