Ingredients for 1 servings:

  • 160 ml milk, room temperature
  • 80 ml water, room temperature
  • 1 tbsp sugar
  • 3 tbsp extra virgin olive oil
  • 2 tbsp dry yeast
  • 320 g flour
  • 1 tsp salt
  • 1 tsp thyme
  • some pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 4 minutes; Total time approx. 2 hours 34 minutes

Makes 6 pieces. In a bowl, stir together the milk, water, 2 tablespoons of olive oil, sugar, and the dry yeast. Add the flour and salt and knead until you have a smooth dough. If it’s too sticky, add a little more flour. Cover the dough with plastic wrap and let it rest in a warm place for 2 hours. After 2 hours, cut the dough into 6 equal pieces. On a floured surface, use a rolling pin to roll out the dough into circles about 20 cm in diameter. Place a pan on the stove and fry the pitas in olive oil over medium heat for 1-2 minutes on each side until golden brown. This goes well with tzatziki and pan-fried gyros. 250 kcal per serving.
