Ingredients for 6 servings:
- 800 g beetroot, ready to eat
- 1 m.-sized apple
- 40 g walnuts
- 200 g Greek yogurt
- 1 garlic clove(s)
- 1 dash of lemon juice
- salt and pepper
Instructions
Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes
Crush the garlic and mix with salt, pepper, lemon juice, and yogurt. Dice the beetroot. Coarsely grate the apple. Finely chop the walnuts. Mix the ingredients well with the marinade. I always let the salad sit for a few hours or overnight; it tastes even better that way. The salad contains approximately 220 calories per serving.
