Ingredients for 1 servings:
- 400 g wheat flour, type 1050 or 550
- 9 g salt
- 7 g dry yeast
- 1 tsp sugar
- 1 tsp Mediterranean herbs, dried
- 20 ml olive oil
- 200 ml water, lukewarm
- 40 g red bell peppers
- 140 g feta cheese
- 3 tbsp cornmeal

First of all: I’ve baked this bread several times. You can add the filling to the dough and shape it into a loaf, or you can roll out the dough, add cheese and peppers, and then simply fold it together. It’s as easy as you like. Both look good. Make a yeast dough from the first seven ingredients. Add the herbs to the dough. The dough shouldn’t stick to your hands after kneading; add lukewarm water or flour if necessary. Then place it in a warm oven to rise. I always set it to around 35 degrees. In the meantime, wash the bell peppers, remove the white membranes and seeds, and chop them very finely. Chop the feta very finely as well. When the dough has almost doubled in size, add the filling—peppers and feta. Then shape the bread however you want. Sprinkle the cornmeal on the bread and let it rise again. Once the volume has increased significantly, set the oven to approximately 200 degrees Celsius and bake for about 30 minutes. Spray the bread occasionally with a watering can. When the bread is fully baked—the loaf should sound hollow when tapped from the bottom—let it cool on a wire rack.
