Apple roast

Ingredients for 4 servings:

  • 1 kg pork neck
  • ½ tsp white pepper
  • 1 tsp sweet paprika powder
  • 1 tsp marjoram, shredded
  • 2 tbsp oil
  • Salt
  • 500 g apples, sour
  • ¼ liter broth
  • ¼ liter of cider or apple juice
  • gravy
  • n. B. sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

Wash the pork thoroughly under running water and pat dry. Rub with the spices. Heat the oil in a roasting pan and sear the meat well on all sides. Meanwhile, peel and core the apples. Sprinkle the meat with salt, add the apples, and roast. Pour hot broth and apple cider over the meat, cover the pan, and braise for about 70-90 minutes. Then keep the roast warm. Strain the sauce, bring to a boil, thicken with gravy, and season with sugar. Serve with Bavarian cabbage and bread dumplings.
