Ingredients for 4 servings:

  • 300 g flour
  • 1 packet of yeast (dry yeast)
  • 1 tsp sugar
  • 150 ml water, warm
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1.2 kg tomatoes
  • Salt and pepper and oregano
  • 2 tbsp olive oil
  • 1 bunch of spring onions
  • 2 garlic cloves, more if desired
  • 500 g minced meat
  • salt and pepper
  • Coriander and rosemary
  • oregano
  • 250 g sheep’s cheese or feta
  • 20 black olives, pitted

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Pizza with fresh, marinated tomatoes, spicy minced meat, feta cheese and olives

First, remove the stems from the tomatoes and cut them into wedges. Marinate them with salt, pepper, a little oregano, and olive oil. Cover and let rest for a while. For the dough, sift the flour into a bowl and mix it with the yeast and sugar. Add the water, oil, and salt and knead with a dough hook until you have a smooth dough. Add a little more water or flour if necessary. Cover and let rise for about 1 hour. For the topping, slice the spring onions, peel the garlic cloves, and finely chop them. Brown both with the minced meat in the heated oil until crispy. Season with salt, pepper, coriander, oregano, and rosemary. Meanwhile, preheat the oven to 200°C (fan oven). Grease a baking tray and spread the risen dough on it. Remove the tomatoes from the marinade, drain well, and spread them over the dough. Spread the minced meat mixture evenly over the dough and crumble the feta cheese over it. Finally, scatter the olives on top. Bake in the preheated oven on the second shelf for about 15-20 minutes.
