Greek yogurt with carrot syrup

Ingredients for 5 servings:

  • 1 kg carrot(s)
  • 1 kg sugar
  • 300 ml water
  • 1 packet of vanilla sugar
  • 1 lemon(s), juice
  • 3 tbsp gelling sugar, optional
  • 1 kg Greek yogurt, 10%

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Peel the carrots and grate them to the desired size or chop them finely in the Thermomix. Place the carrots in a saucepan, cover with water, and simmer for about 15 minutes, until soft. Then strain the water. Add the sugar to the carrots and simmer for 30 minutes. The carrots should now be thickened. If the carrot syrup is too runny, stir in another 3 tablespoons of gelling sugar and simmer for another 10 minutes. Finally, stir in the vanilla sugar and lemon juice. Serve the carrot syrup with the yogurt.
