Ingredients for 4 servings:
- 500 g asparagus, green
- 500 g pork strips
- 1 m.-sized sweet potato(s)
- 4 m.-sized potatoes
- 1 m.-sized onion(s)
- 2 cloves garlic
- 400 ml coconut milk
- 250 ml water
- 1 tsp salt
- 2 tsp curry powder
- 2 tbsp oil for the pan
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes
with meat
Peel the onion and chop into small pieces. Peel the potatoes and sweet potatoes and cut into approximately 1 cm cubes. Wash the asparagus and cut into approximately 5 cm long pieces. Peel the garlic. Fry the onions in the oil in a pan and add the pork strips, stirring until they are no longer red. Then add the potatoes and sweet potatoes and continue stirring. Add the curry powder, salt, coconut milk, and water, and simmer for about 15 minutes, stirring occasionally. Then add the asparagus pieces and the crushed garlic, which you then add as well. Simmer for another 15 minutes, stirring frequently, until cooked through. Serve with rice (e.g., jasmine rice).
