Ingredients for 4 servings:
- 1 onion(s), finely chopped
- some olive oil, for frying
- ½ dl vegetable broth
- 1 dl orange juice (blood orange juice)
- 1 dl cream
- Salt
- Pepper (orange pepper)
- 500 g asparagus, green
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Sauté the onion in a little olive oil, then deglaze with the vegetable stock. Then add the juice and cream, season with salt and orange pepper, and let the sauce simmer slightly. Finally, add the diagonally sliced asparagus and cook in the sauce until tender. PS: This recipe also works with white or mixed asparagus.
