Green asparagus with minced beef and garlic dip

Ingredients for 2 servings:

  • 300 g minced beef
  • 1 kg asparagus, green
  • 1 m.-sized onion(s)
  • 1 tsp fresh ginger
  • 2 tbsp soy sauce
  • 1 tbsp turmeric powder
  • 4 cloves garlic
  • 2 cups of crème fraîche, light, 125 ml each
  • 2 tbsp mineral water
  • Salt
  • Pepper, white

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Heat the water in a pan and fry the ground beef with the finely diced onion. Then deglaze the pan with the soy sauce. Cut the asparagus into approximately 3 cm long pieces, add it, and stir occasionally at 80% heat. Season with turmeric, salt, and pepper, and season to taste. A spoonful of soy sauce can be added if desired. For the dip, place the crème fraîche in a bowl. Finely press or finely chop the garlic, add it, and mix. Mix with salt, pepper, and fresh ginger, if using, and season to taste. Let the dip sit for about 30 minutes.
