Green asparagus wrapped in bacon with cherry tomatoes and pine nuts

Ingredients for 1 servings:

  • 8 stalk(s) asparagus, green
  • 4 slices of raw ham
  • 5 cherry tomatoes
  • 1 handful of pine nuts
  • olive oil
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 35 minutes

for a casserole dish

Trim the woody ends of the asparagus. Rub the asparagus with olive oil and season with salt and pepper. Wrap each spear in half a slice of ham. Place in a baking dish and sprinkle with halved cherry tomatoes and the pine nuts. Season again with salt and pepper, if desired. Roast in an oven preheated to 200°C (top/bottom heat) for about 30 minutes on the middle rack, until the asparagus is slightly soft, the ham is crispy, and the pine nuts are starting to brown. This dish goes well with potato wedges, for example, and can be placed in the oven right away.
