Ingredients for 6 servings:
- 800 g beans (princess)
- 150 g dried tomatoes in oil, diced
- 100 g sheep’s cheese, diced
- 50 g black olives, pitted, finely diced
- 2 medium-sized shallots, finely diced
- 2 medium-sized garlic cloves, peeled and finely diced
- 2 tbsp parsley, chopped
- 5 tbsp red wine vinegar
- Salt and pepper, black, from the mill
- 100 ml olive oil
Instructions
Working time approx. 20 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 10 minutes; Total time approx. 3 hours 30 minutes
Cook the beans in boiling salted water for 5 minutes, drain, rinse, and let them drain. Mix the dressing ingredients well, pour over the cooled beans, and let it sit for at least 3 hours. Then toss with the feta cheese, olives, and tomatoes and serve.
