Green bean soup

Ingredients for 4 servings:

  • 2 jars of beans (green beans)
  • 10 small potatoes
  • 1 onion(s)
  • 100 g pork back bacon, smoked
  • some flour
  • possibly salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

mom’s way

Peel, rinse, and dice the potatoes. Place the green beans and their stock in a soup pot and bring to a boil. Add the diced potatoes and simmer over low heat until the potatoes are tender. In the meantime, peel the onion and finely dice it, along with the bacon. Fry the bacon in a non-stick pan. Add the diced onion and sauté until translucent. Add a little flour (like a roux) and stir until browned. Bring the bean soup back to a boil, pour the bacon and onion roux over the soup, and stir. One of my favorite soups from my mother. I eat at least three bowls of it.
