Ingredients for 4 servings:
- 4 spring onions
- 2 chili peppers, green
- 1 small bunch of arugula
- 150 g feta cheese
- 8 eggs
- 2 tbsp crème fraîche
- 1 pinch of chili flakes
- salt and pepper
- 2 tbsp oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes
Wash and trim the spring onions, chilies, and arugula. Slice the spring onions and chilies into thin rings. Roughly chop the arugula. Crumble the feta. Whisk the eggs with the crème fraîche, chili flakes, salt, and pepper. Heat 1/2 tablespoon of oil in a non-stick pan and pour in 1/4 of the egg mixture. Stir continuously and let set for 2-3 minutes. Sprinkle with 1/4 each of the spring onions, chilies, arugula, and feta, and fold together. Cook three more omelets in the same way. Serve with salad.
